HoofdgerechtAsperges met ham en ei
Ingredients
- 2 kilos white asparagus
- 8 plakken beenham
- 4 eggs
- 125 gram roomboter
- 800 grams of baby potatoes
- 1 bunch of parsley
- nutmeg
Method
- Schil de asperges van kop naar voet en snijd de houtige onderkant eraf.
- Leg de asperges in kokend water met zout en laat ze 12 tot 15 minuten garen tot ze zacht zijn.
- Kook de krieltjes in ongeveer 15 minuten gaar en de eieren in 9 minuten hard, pel en hak de eieren.
- Smelt de roomboter en breng op smaak met wat nootmuskaat.
- Hak de peterselie fijn en serveer de asperges met beenham, ei, krieltjes, gesmolten boter en peterselie.

- 160 grams of fresh goat's cheese
Method
- Take the goat's cheese out of the fridge half an hour before serving.
- Slice it with a wet knife.

Ingredients
- 200 grams smoked salmon
- 1 bunch of dill
- 100 grams crème fraîche
- 8 small toasts
Method
- Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
- Spread the toasts with the crème fraîche.
- Top with a piece of smoked salmon and garnish with the rest of the dill.
To serve one bottle or glass per person
