Ingredients
- 600 grams of chicken breast
- 2 leeks
- 3 carrots
- 2 celery sticks
- 1 litre chicken stock
- 200 millilitres of cooking cream
- 2 egg yolks
- 1 bunch of parsley
Method
- Snijd de prei, de wortels en de bleekselderij in fijne reepjes.
- Breng de kippenbouillon aan de kook, voeg de groenten toe en kook ze 5 minuten.
- Snijd de kipfilet in blokjes en pocheer ze 8 tot 10 minuten op laag vuur in de bouillon tot de kip gaar is.
- Whisk the egg yolks loose with the cooking cream and stir in a few spoonfuls of hot stock.
- Haal de pan van het vuur, roer het roommengsel erdoor en verwarm zachtjes zonder te koken tot de soep bindt.
- Season with salt and pepper and sprinkle with chopped parsley.

- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Method
- Preheat the oven to 180 °C.
- Sprinkle the pretzels with a little water and bake for 5 to 8 minutes until crisp and warm.
- Serve with the mustard in a small bowl.
