Why this works together

About this bottle

Most Irish whiskeys are distilled three times, unlike the Scotch variety, with the exception of Auchentoshan. Peat is used sparingly in malting the grain in Ireland, which is why many finishes of Irish whiskeys are much softer than their Scotch counterparts. Pure Pot Still is a method of whiskey making in Ireland in which a mix of malted and unmalted grain is used, distilled in a pot still, a fairly unique Irish method.
