Fruits you rarely come across distilled
An eau de vie is a clear spirit distilled from fermented fruit, with no added sugar and no ageing in wood. What is in the bottle therefore comes entirely from the fruit and from the distilling.
We have five bottles from Nusbaumer, and what stands out is the range. Alongside two distillates of the Williams pear there is quince, a fruit with little sugar that therefore needs a lot of fruit per bottle. Then a kirsch of black mountain cherries and a plum distillate.
Nusbaumer makes more than just eau de vie. Our webshop also lists an aquavit, a herbal bitter and a liqueur from this house; these fall into other categories.

What does Exception mean at Nusbaumer?
Exception is the name of the house’s own range, alongside the regular line. Nusbaumer lists that range that way on its own site too. We have three of them: the red Williams pear, the kirsch of mountain cherries and the farmer’s plum.
A craft distillery in the Val de Villé
- The house in brief
- 1947Joseph Nusbaumer starts the distillery in Steige.
- AlsaceVal de Villé, Bas-Rhin department.
- FamilyStill an independent family business.
- CopperDistilled in traditional copper alembics.
Distillerie Nusbaumer is in Steige, a village in the Val de Villé in Alsace. Joseph Nusbaumer began there in 1947. The house calls itself a craft distillery and is still an independent family business today.
It is distilled in copper alembic stills. Besides fruit eau de vie, Nusbaumer makes herbal liqueurs, gin and aquavit. Alsace has a long tradition in fruit distillates; kirsch, quince and pear belong to that region.
What is kirsch?
Kirsch is an eau de vie made from cherries. At Nusbaumer these are merises, the small black mountain cherries. Kirsch is not sweet: no sugar is added and it is not aged in wood, so the spirit stays clear.
The Sélection or the Exception?
The difference between the two ranges lies in origin and treatment. The Poire Williams Sélection and the Coing belong to the regular line. The three Exception bottles come from fruit that the house names separately and receive longer maturation in stainless steel; for the Prune de Ferme this is twenty years.
If you want to see what a single fruit can do, the Coing is the most idiosyncratic of the five: quince has little sugar, so a lot of fruit goes into one bottle.
