Why here

A distillery that plays with yeast

Almost every Scottish distillery uses the same standard yeast. Holyrood deliberately does not, and works with sake yeast and beer yeast, among others. You notice it: the bottles taste remarkably different from one another.

We have five, including a cask from bottler Claxton’s. If you do not know which one you need, give us a call. That is what we are here for.

The bottles

Five bottles from Edinburgh.

About the distillery

Old barley and unusual yeast

  • Holyrood in four facts
  • 2019the distillery opens in Edinburgh.
  • Goods shedthe building is a former railway shed at St Leonards.
  • Yeastamong other things, sake yeast and beer yeast are used.
  • 2023the first own single malt, Arrival, is released in October.

Holyrood is housed in a former goods shed near St Leonards in Edinburgh and opened in 2019. The founders deliberately chose a city distillery with a visitor centre in the middle of the capital.

What sets the house apart is the emphasis on raw material and fermentation. It works with old barley varieties and with a wide range of yeasts: alongside the standard distiller's yeast, also sake yeast and yeast from the beer brewery. Those choices often determine the flavour more than the cask does.

The first own single malt, Arrival, appeared in October 2023. The series that followed carries names such as Ambir, Embra and Pitch. In 2025 Holyrood was named Distiller of the Year at the World Whiskies Awards.

Sake yeast in Scotch whisky: not many do that.
