Signatory. Achtenzestig whiskies.

Signatory Vintage was founded in Edinburgh in 1988 by Andrew Symington. The house does not distil itself but buys individual casks from Scottish distilleries and releases them under its own name: per cask, with the vintage and the cask number on the label.

In 2002 Signatory bought the Edradour distillery in Pitlochry, for years the smallest in Scotland. Since then the house has been both: bottler of other people's casks and owner of its own distillery. The office and bottling plant are now on that site.

What makes Signatory easy to follow are the fixed series. The Un-chillfiltered Collection is always bottled at 46 percent and is not chill-filtered. The 100 Proof Edition is at 57.1 percent, exactly one hundred British proof. The Cask Strength Collection goes into the bottle undiluted, and the Symington’s Choice is the personal selection of the founder.

One hundred British proof is 57.1 percent. The whole range is bottled at that, without exception.

Un-chillfiltered Collection. Always 46 percent, never chill-filtered. The latter means the oils and fats from the distillate stay in the bottle; the whisky may therefore turn cloudy with water or ice. That is not a flaw but proof that nothing has been taken out.

100 Proof Edition. Always 57.1 percent. One hundred British proof comes out at exactly that percentage, so the whole range is at it, from a Cameronbridge at 41.99 euro to a Speyside on oloroso at 119.99.

Cask Strength Collection. Bottled undiluted, so the strength differs per cask. On our shelf it runs from 52.3 to 65 percent.

Symington’s Choice. The personal selection of founder Andrew Symington. We have four, including a Macallan of twenty-five years and a Dalmore of twenty-one.
