Red wine · Germany · pinot noir · 13%
Why this works together
Chosen for the colour (red wine), the flavour profile from our online shop (fruity & soft), the grape (pinot noir), the alcohol percentage (13%) and the notes of cherry and pepper in the description. Pinot noir has little tannin and a lot of fragrance; that is why it sits well next to poultry, duck and mushrooms.
Serve at 16 to 18 °C.
What is needed
For 4 people
Main courseTurkey with cranberry sauce
Ingredients
- 800 grams turkey fillet
- 200 grams cranberries
- 2 tablespoons sugar
- 100 millilitres orange juice
- 30 grams butter
- 4 sprigs of sage
Method
- Preheat the oven to 180 °C and season the turkey fillet with salt and pepper.
- Brown the fillet all over in the butter with the sage and place it in an ovenproof dish.
- Cook the turkey in the oven for 20 to 25 minutes, until the meat is no longer pink and the juices run clear.
- Meanwhile, cook the cranberries with the sugar and the orange juice for 8 to 10 minutes until the berries burst and the sauce thickens.
- Let the meat rest for 5 minutes, slice it and serve with the cranberry sauce.
With the cheeseLeyden cumin cheese

- 160 grams of Leyden cumin cheese

- 1 tablespoon of olive oil
Method
- Cut the chorizo into slices half a centimetre thick.
