Ingredients

  • 800 grams of lamb shoulder, diced
  • 2 onions
  • 3 cloves of garlic
  • 20 grams of fresh ginger
  • 3 eetlepels garam masala
  • 400 grams of chopped tomatoes
  • 200 gram volle yoghurt
  • 250 gram basmatirijst
  • 1 bunch of coriander

Method

  1. Fruit de gesnipperde uien in ongeveer 10 minuten goudbruin in olie.
  2. Voeg fijngehakte knoflook, geraspte gember en garam masala toe en bak 1 minuut mee.
  3. Brown the lamb on all sides and add the diced tomatoes.
  4. Laat afgedekt 1,5 tot 2 uur zachtjes stoven tot het vlees mals is en voeg zo nodig wat water toe.
  5. Take the pan off the heat, stir in the yoghurt and season with salt.
  6. Serveer met gekookte basmatirijst en verse koriander.

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 200 grams of tortilla chips
  • 2 avocados
  • 1 lime
  • 1 tomato
  • 1 red onion

Method

  1. Cut the red onion and the tomato into small cubes.
  2. Mash the flesh of the avocados with the juice of the lime and a pinch of salt.
  3. Stir in the onion and the tomato and season with pepper.
  4. Serve the guacamole straight away in a bowl with the tortilla chips alongside.
