- 2 tablespoons of mustard
Method
- Haal de kaas en de worst een half uur van tevoren uit de koelkast.
- Snijd de kaas in plakken of blokjes, de worst in dunne plakjes en het stokbrood in schijven.
- Put everything on a board with the olives, the nuts and a small bowl of mustard.

- 160 grams of matured Gouda
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Method
- Heat the frying oil to 180 °C.
- Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.
- Drain on kitchen paper and serve immediately with mustard.

De Texelse Bierbrouwerij begon in 1994 in Oudeschild, in de voormalige zuivelfabriek van het dorp. De brouwers werken zoveel mogelijk met grondstoffen van het eiland zelf: duinwater en gerst en tarwe die op Texel zijn geteeld. Daarnaast gebruikt de brouwerij eigen hopsoorten en giststammen. Die werkwijze, ambacht gecombineerd met moderne techniek, leverde prijzen op: Skuumkoppe won in 2017 goud op de Dutch Beer Challenge, en in 2015 werd de brouwerij uitgeroepen tot beste bedrijf van Noord-Holland.
