We keep one of the widest drinks ranges in the Netherlands, in a family business on the Brink in Bathmen. For Spanish gins, that means not three or four choices but 13.
Spain turned the gin and tonic into a ritual of its own, and the gin made there is built for it: aromatic, fruity or spicy, made to be combined. We keep them because they invite experimenting.

In Spain, gin and tonic is served in a copa de balón, a large round glass full of ice. The glass holds the aromas and the generous ice ensures the drink dilutes slowly.
Spanish gins respond to this with pronounced flavours: citrus, red fruit, herbs or flowers. The garnish is part of it and is chosen to match the botanicals of the bottle.
In this style, the choice of tonic matters at least as much as the gin itself. A neutral tonic lets the gin speak; an aromatic tonic adds another layer on top.

How do you pour a Spanish gin and tonic?
In a large balloon glass, filled to the brim with ice cubes so that the drink stays cold and dilutes slowly. Then the gin, then the tonic gently along a spoon, and finally a garnish that matches the botanicals of the gin.
