What is terroir?

The International Organisation of Vine and Wine (OIV) adopted resolution OIV/VITI 333/2010 in 2010 and defined in it what terroir is.
In that text, terroir is called a concept that refers to an area in which shared knowledge develops about the interaction between the identifiable physical and biological environment and the applied vitivinicultural practices, and which gives the products from that area distinctive characteristics.
Regulation (EU) No 1308/2013 does not use the word terroir, but Article 93 does lay down what a protected designation of origin and a protected geographical indication must live up to.
For a protected designation of origin (PDO), Article 93(1)(a) provides that the quality and characteristics of the product are essentially or exclusively attributable to a particular geographical environment with its inherent natural and human factors. For a protected geographical indication (PGI) the bar is lower: a specific quality, reputation or other characteristic must be attributable to the origin.
- PDO: 100 percent of the grapes from the delimited area
- Both: the preparation takes place within that area
What you call minerality in the glass stems more from acidity, the course of fermentation and sulphur compounds than from stone. That does not make the story any less true: the soil does steer, via water, nitrogen and warmth, what happens in the grape. It is just that this route runs through the plant, not through the taste bud.
Hoeveel wijngebieden in Europa zijn wettelijk afgebakend?
On 4 November 2021, Europe counted a total of 1,177 protected designations of origin for wine, spread across 21 countries.
Researchers published that inventory in Scientific Data and mapped, for each PDO, the legal documents and the limits. Six countries together account for about 80 percent of all European wine PDOs: Italy, France, Germany, Austria, Spain and Portugal.
Terroir helps you mainly to steer expectations: the area on the label says something about ripeness, acidity and style, not about the quality of that one bottle.
Here in Bathmen that is the reason why, with wine, we always ask what you are going to use it for. The region is the starting point, the producer and the year determine the rest.

Short answer
Short answers to related questions
- Is terroir hetzelfde als een appellation?
- Nee.
- With a PDO all the grapes come from the area, with a PGI at least 85 percent. For both, production takes place in the area.
