Ingredients

  • 12 scallops
  • 80 grams butter
  • 40 grams hazelnuts
  • 1 lemon
  • 100 grams lamb's lettuce
  • sea salt and pepper

Method

  1. Toast the hazelnuts golden brown in a dry frying pan, rub off the skins and chop them coarsely.
  2. Pat the scallops dry and season them with sea salt and pepper.
  3. Heat a dash of oil in a frying pan and fry the scallops golden brown for 1.5 to 2 minutes per side.
  4. Melt the butter in a saucepan until it smells nutty brown and add the hazelnuts and a dash of lemon juice.
  5. Divide the lamb's lettuce between the plates, place the scallops on top and spoon the hazelnut butter over them.

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 150 grams walnuts
  • 1 tablespoon honey
  • sea salt

Method

  1. Preheat the oven to 170 °C.
  2. Mix the walnuts with the honey and spread them out on a baking tray lined with baking paper.
  3. Roast for 8 to 10 minutes until fragrant and lightly coloured, stirring halfway.
  4. Sprinkle immediately with sea salt and leave to cool until crisp.

De naam Writers' Tears verwijst naar de Ierse schrijvers en kunstenaars uit de negentiende en twintigste eeuw, de tijd waarin de Ierse pot still-whiskey bloeide. Bernard Walsh bedacht het merk in 2009. In 2022 verscheen een speciale Copper Pot ter ere van honderd jaar Ulysses van James Joyce, met een plek en hoofdstuk uit het boek op de fles.
