Why here

Summer and winter side by side

Daftmill only distils when work on the farm allows: two months in the summer and a few months in the winter. These two campaigns are bottled separately, and that is exactly why it is nice that we have one of each. Same farm, same barley, different season.

These bottles are scarce: around a hundred casks are filled per year, where an ordinary distillery fills thousands. Releases are usually gone quickly. Not sure which one you should have? Give us a call. That is what we are here for.

The range

A summer and a winter batch

Both at 46 percent, both made from barley from their own land.

About the distillery

A farmer who distils now and then

  • The distillery in four moments
  • 2003The Cuthbert brothers apply for a permit to convert the old mill buildings.
  • 2005On 16 December the first spirit runs.
  • 2018The first bottle is released: a twelve-year-old, 629 pieces.
  • nowA fixed rhythm of summer and winter bottlings.

Daftmill stands on the farm of the Cuthbert family in the Howe of Fife, north of Edinburgh. Barley, potatoes and livestock have been kept there for generations. In 2003 the brothers Francis and Ian Cuthbert applied for a licence to convert the old mill buildings into a distillery; on 16 December 2005 the first spirit ran.

What sets Daftmill apart is the pace. Francis Cuthbert only distils when farm work allows: a few months in summer and a few in winter. That seasonal rhythm was normal in the nineteenth century and has since vanished almost everywhere. The barley comes from the farm's own land, the water from its own spring on the farm.

And then the patience. Where many new distilleries release their first bottle after three years, Daftmill waited twelve years. That first bottling from 2018 numbered 629 bottles. Since then, small batches have appeared each season, which usually sell out quickly.

About a hundred casks a year. A mid-sized Scottish distillery fills more than that in a week.

Why summer and winter batches?

Because it distils in two separate periods, and these are kept apart. The label states which season it was and in which year it was distilled and bottled. Summer and winter do not give the same whisky: temperature and humidity differ, and that carries through into the fermentation. Tasting them side by side is exactly what that separation is meant for.

Frequently asked questions about Daftmill

How much Daftmill does ’t Bockje have in stock?

Two bottles: the summer batch 2012 and the winter batch 2011.

Why is Daftmill so scarce?

Because only about a hundred casks are filled per year and distilling only happens when the work on the farm allows it. Releases are small and usually gone quickly.

What is the difference between the summer and winter batch?

They come from two separate distilling runs. Temperature and humidity differ per season and that carries through into the fermentation, so the two do not taste the same. They are deliberately bottled separately.

Why did it take twelve years for the first bottle?

Because the family wanted to wait until the whisky was ready. The first bottling appeared in 2018, twelve years after the first distillation, in a run of 629 bottles.

Does the barley really come from their own land?

Yes. The farm grows the barley itself and the water comes from its own spring on the site. Only the malting happens elsewhere.

Does ’t Bockje also ship Daftmill abroad?

Yes. We ship to around forty countries. Email info@bockje.nl if you want to know whether your country is included.
