Ingredients
- 800 gram gemengde vis
- 300 grams of mussels
- 1 fennel bulb
- 2 onions
- 3 cloves of garlic
- 400 gram tomaten
- 1 liter visbouillon
- 4 tablespoons of olive oil
- 1 baguette
- a pinch of saffron
Method
- Snipper de ui, snijd de venkel in reepjes, hak de knoflook fijn en snijd de tomaten in stukken.
- Heat the olive oil in a large pan and soften the onion, fennel and garlic for 5 minutes.
- Voeg de tomaten, de saffraan en de visbouillon toe en laat 15 minuten zachtjes koken.
- Snijd de vis in grote stukken, leg ze in de soep en gaar ze 5 minuten op laag vuur.
- Voeg de schoongemaakte mosselen toe, kook 3 tot 4 minuten tot ze open zijn en gooi gesloten exemplaren weg.
- Breng op smaak met zout en peper en dien op met geroosterd stokbrood.

- 2 avocados
- 1 lime
- 1 tomato
- 1 red onion
Method
- Cut the red onion and the tomato into small cubes.
- Mash the flesh of the avocados with the juice of the lime and a pinch of salt.
- Stir in the onion and the tomato and season with pepper.
- Serve the guacamole straight away in a bowl with the tortilla chips alongside.
