Method
- Haal de kaas en de worst een half uur van tevoren uit de koelkast.
- Snijd de kaas in plakken of blokjes, de worst in dunne plakjes en het stokbrood in schijven.

- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Method
- Heat the frying oil to 180 °C.
- Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.
- Drain on kitchen paper and serve immediately with mustard.

De ene fles komt recht uit de brouwketels, de andere rustte vijf jaar in de rijpingsmagazijnen van de brouwerij. Een bijgevoegde proeffiche helpt om de verschillen tussen het jonge en het gerijpte bier te noteren.

Het Anker staat in Mechelen, op de plek waar begijnen in 1471 al bier brouwden. In 1872 kwam de brouwerij in handen van de familie Van Breedam, en in 1904 gaf Louis Van Breedam haar de naam Het Anker. De naam Gouden Carolus verwijst naar keizer Karel V, die zijn jeugd in Mechelen doorbracht. Naast de brouwerij met hotel en brasserie heeft het bedrijf sinds 2010 een whiskystokerij op een boerderij in Blaasveld.
