With the mealRack of lamb with rosemary and garlic
Ingredients
- 2 lamsracks van acht ribben
- 4 cloves of garlic
- 4 sprigs of rosemary
- 3 tablespoons of olive oil
- 800 grams of baby potatoes
- 400 grams green beans
Method
- Preheat the oven to 200 °C.
- Mix the olive oil with pressed garlic and chopped rosemary and rub the racks of lamb with it, together with salt and pepper.
- Schroei de racks rondom aan in een hete pan en gaar ze 12 tot 15 minuten in de oven tot ze rosé zijn.
- Fry the baby potatoes in oil for 20 minutes until golden brown and cooked through, and boil the green beans for 6 to 8 minutes until al dente.
- Laat het vlees 5 minuten rusten en snijd het tussen de botjes door in koteletjes.

- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.

Bodegas Salentein ligt in de Uco-vallei in Mendoza, in het district Tunuyán. Het bedrijf werd in 1996 opgericht door de Nederlandse ondernemer Mijndert Pon; de eerste oogst volgde in 1999. Het landgoed van ruim 2.000 hectare bestaat uit drie delen, El Oasis, La Pampa en San Pablo, met wijngaarden op 1.050 tot 1.700 meter hoogte. De kruisvormige wijnmakerij werkt met zwaartekracht, zodat er geen pompen nodig zijn. Op het terrein staat ook kunstcentrum Killka, met onder meer Nederlandse kunst uit de negentiende en twintigste eeuw.
