About this bottle

The Castellani Santovino Sommavite is an Italian dessert wine in a 50 cl bottle, made from dried malvasia and trebbiano grapes. It is made in the tradition of the Tuscan Vin Santo, in which the grapes first dry before they are pressed, but carries a name of its own. After fermentation the wine matures on oak.

Castellani is een Toscaans wijnhuis met wortels in Montecalvoli, in de provincie Pisa. Wijnboer Alfred Castellani besloot daar eind negentiende eeuw zijn wijn zelf te bottelen en te verkopen; in 1903 werd het bedrijf ingeschreven bij de Kamer van Koophandel in Pisa. Zijn zonen Duilio en Mario breidden het uit, met Santa Lucia als beste wijngaard. Na de overstroming van 1966 verhuisde het bedrijf naar Terricciola.

The Italian wine house Castellani was founded at the end of the 19th century in the small town of Montecalvoli by winegrower Alfred Castellani. Besides growing grapes alone, he found it was time to also do his own bottling and arrange his own sales. From 1903 the company was officially registered with the Chamber of Commerce in Pisa. It was his sons Duilio and Mario who ensured the expansion of the company.

Hun beste wijngaard ligt in Santa Lucia waar rode wijnen worden geproduceerd die lang kunnen rijpen en die in de specifieke mandflessen worden gebotteld. Giorgio, de zoon van Duilio, heeft er voor gezorgd dat Castellani op grote schaal ging exporteren. Na de overstroming in 1966 werd besloten om het bedrijf te verplaatsen naar een hoger gelegen gebied op de heuvels van Terricciola.

Vanaf dat moment kwam ook Roberto,de broer van Giorgio, in het bedrijf terwijl hij eigenlijk een goedgeletterde journalist was in Florence. Door zijn intrede werd de Poggio al Casone Vineyard overgenomen en de wijngaarden in Santa Lucia verder uitgebreid. In de Nieuwjaarsnacht van 1982 verwoestte een brand bijna het gehele bedrijf Castellani en dachten zij dat dit het einde zou zijn, maar binnen een paar maanden namen de Castellani broers het Campomaggio Estate over en konden zij hun zaken voortzetten.

Deze Italiaanse dessertwijn Santovino is eigenlijk een goedkoper alternatief voor de beroemde ( maar zeer dure ) Vin Santo. Beide wijnen worden gemaakt van ingedroogde druiven als Malvasia en Trebbiano en minstens 3 jaar gerijpt op eikenhout. Zijn smaak is te omschrijven als noten, beetje sterke thee, abrikozen en kruiden. Uiteraard behoorlijk zoet ! Santovino is perfect geschikt bij de typische Toscaanse amandelkoekjes genaamd Cantuccini. Hoog in alcohol 16%.

Ingredients

500 grams of Christmas stollen with almond paste
50 grams butter
icing sugar

Method

Cut the Christmas stollen into slices.
Fry the slices in butter for 1 to 2 minutes per side until golden brown.
Dust with icing sugar and serve warm.

With the cheeseFresh ricotta with honey

Ingredients

200 grams fresh ricotta
2 tablespoons honey

Method

Spoon the ricotta into a small bowl.
Pour the honey over just before serving.

StarterRoasted walnuts

Ingredients

150 grams walnuts
1 tablespoon honey
sea salt

Method

Preheat the oven to 170 °C.
Mix the walnuts with the honey and spread them out on a baking tray lined with baking paper.
Roast for 8 to 10 minutes until fragrant and lightly coloured, stirring halfway.
Sprinkle immediately with sea salt and leave to cool until crisp.
