Michel Schneider Silvaner Eiswein is een Duitse dessertwijn uit Rheinhessen, gemaakt van silvaner. De druiven blijven aan de stok tot na de eerste vorst en worden bevroren geplukt. Bij het persen blijft het ijs in de pers achter, zodat alleen geconcentreerd, suikerrijk sap overblijft. Daardoor bevat de wijn ongeveer 140 gram restsuiker per liter, bij een alcoholgehalte van 8% vol volgens het etiket. De fles bevat 37,5 cl.

Michel Schneider maakt sinds 1869 wijn in Rheinhessen en combineert daarbij de tradities van de streek met moderne werkwijzen. Rheinhessen ligt in de bocht van de Rijn tussen Worms, Mainz en Bingen en is het grootste wijngebied van Duitsland. Silvaner is er van oudsher een belangrijke druif.

Een heerlijke Duitse dessertwijn, gemaakt van druiven die bevroren zijn geoogst na de eerste herfstvorst. De druiven worden zachtjes geperst, waardoor het bevroren water in de pers blijft en het druivensap bijzonder suikerachtig en sterk van smaak is. Eiswein wordt alleen gemaakt als de druiven tot de eerste nachtvorst gezond en van goede kwaliteit blijven.

De wijn is gemaakt van 100% Silvaner-druiven. De smaak heeft kenmerken van honing, dadels en vijgen. Het zoete mondgevoel wordt opgefrist door merkbare zuurgraad. Een bijzonder goed paar voor diverse fruitdesserts en kazen. Restsuiker 140 g/l.

500 grams of Christmas stollen with almond paste
50 grams butter
icing sugar

Method

Cut the Christmas stollen into slices.
Fry the slices in butter for 1 to 2 minutes per side until golden brown.
Dust with icing sugar and serve warm.

With the cheeseFresh ricotta with honey

Ingredients

200 grams fresh ricotta
2 tablespoons honey

Method

Spoon the ricotta into a small bowl.
Pour the honey over just before serving.

StarterRoasted walnuts

Ingredients

150 grams walnuts
1 tablespoon honey
sea salt

Method

Preheat the oven to 170 °C.
Mix the walnuts with the honey and spread them out on a baking tray lined with baking paper.
Roast for 8 to 10 minutes until fragrant and lightly coloured, stirring halfway.
Sprinkle immediately with sea salt and leave to cool until crisp.
