Main courseRabbit with prunes
Ingredients
- 4 rabbit legs
- 200 grams of prunes
- 2 onions
- 330 millilitres of dark beer or red wine
- 2 tablespoons of flour
- 40 grams of butter
- 4 sprigs of thyme
Method
- Season the rabbit legs with salt and pepper, dredge them in the flour and brown them all over in the butter.
- Take the meat out of the pan and fry the chopped onions for 5 minutes.
- Return the meat to the pan, pour in the beer or wine and add the thyme and the prunes.
- Leave to simmer gently, covered, for about 1.5 hours until the meat is tender and comes away from the bone.
- If necessary, reduce the sauce a little without the lid and season with salt and pepper.

- 160 gram rijpe schapenkaas
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

- 150 gram tapenade
- 1 baguette
Method
- Snijd het stokbrood in dunne plakken.
- Rooster ze goudbruin in de oven of onder de grill en laat iets afkoelen.
- Bestrijk de toastjes met tapenade en serveer direct.
