Ingredients

  • 2 kilos spare ribs
  • 6 tablespoons barbecue sauce
  • 2 tablespoons honey
  • 2 teaspoons smoked paprika
  • 2 cloves garlic
  • 4 corn cobs

Method

  1. Preheat the oven to 150 °C.
  2. Rub the spare ribs with the paprika, salt and pepper, wrap them in aluminium foil and cook them in the oven for 2 to 2.5 hours.
  3. Mix the barbecue sauce with the honey and the crushed garlic.
  4. Boil the corn cobs for 10 minutes in salted water.
  5. Grill the spare ribs and the corn for 10 minutes on the hot barbecue, brushing the ribs regularly with the sauce until they shine.

  • 160 grams Stilton

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.
Chocolate trufflesAfter the mealChocolate truffles

Ingredients

  • 200 grams dark chocolate
  • 150 millilitres whipping cream
  • 20 grams butter
  • 3 tablespoons cocoa powder

Method

  1. Finely chop the chocolate and put it in a bowl.
  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

For this blend, master blender Emma Walker used data from the British weather service Met Office to search for whiskies distilled in the coldest Scottish winters. She chose casks from Dalwhinnie, Clynelish and Brora, among others, distilleries in the north and high in the mountains. It is also one of the first bottlings with whisky from Roseisle. For Blue Label, according to Johnnie Walker, only one in ten thousand casks qualifies.
