Ingredients
- 800 grams of lamb shoulder, diced
- 1 kilo potatoes
- 3 carrots
- 2 onions
- 1 litre of beef stock
- 4 sprigs of thyme
Method
- Sprinkle the lamb with salt and pepper and brown it all over in oil in a casserole.
- Add the onions in wedges and the carrots in pieces and fry them for 5 minutes.
- Pour in the beef stock, add the thyme and leave everything to simmer gently, covered, for 1 hour.
- Add the potatoes in rough chunks and stew for another 45 minutes until the meat and potatoes are tender.
- Remove the thyme sprigs and season with salt and pepper.

Ingredients
- 160 grams mature cheddar
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Ingredients
- 200 grams pâté de campagne
- 100 grams gherkins
- 1 baguette
Method
- Take the pâté out of the fridge a quarter of an hour before serving.
- Slice the pâté and cut the baguette into rounds.
- Serve on a board with the gherkins.
