Ingredients
- 4 herrings
- 1 onion
- sweet and sour gherkins
Method
- Finely chop the onion and slice the gherkins.
- Keep the herring well chilled until just before serving.
- Cut the herring into pieces or serve it whole, with the onions and the gherkin alongside.
With the mealSushi and sashimi
Ingredients
- 400 grams of sushi rice
- 300 grams of sushi-grade salmon
- 200 grams of sushi-grade tuna
- 4 sheets of nori
- 4 tablespoons of rice vinegar
- 6 tablespoons of soy sauce
- wasabi and pickled ginger
Method
- Rinse the sushi rice until the water runs clear and cook it according to the instructions on the packet.
- Gently mix the warm rice with the rice vinegar and a little salt and leave to cool to room temperature.
- With a sharp knife, cut the salmon and tuna against the grain into slices for sashimi and into strips for the rolls.
- Place a sheet of nori on a bamboo mat, spread a thin layer of rice over it, lay a strip of fish on top and roll up firmly.
- Cut the rolls into pieces with a wet knife and serve with the sashimi, soy sauce, wasabi and pickled ginger.
With the cheeseMozzarella di bufala
Ingredients
- 160 grams of mozzarella di bufala
Method
- Take the mozzarella out of the fridge half an hour before serving.
- Tear it into pieces and serve immediately.

Opihr is made at G&J Distillers in Warrington, under master distiller Joanne Moore. She chose botanicals that follow the route: black pepper, cardamom and ginger from India, cumin from Turkey, coriander from Morocco, bitter orange from Spain, juniper from Italy and angelica from Germany. To that come cubeb berries and grapefruit peel.
