Method
- Haal de kaas en de worst een half uur van tevoren uit de koelkast.
- Snijd de kaas in plakken of blokjes, de worst in dunne plakjes en het stokbrood in schijven.
- Put everything on a board with the olives, the nuts and a small bowl of mustard.

- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

- Heat the frying oil to 180 °C.
- Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.

Brouwerij Wilderen is in Wilderen near Sint-Truiden, in Haspengouw, and dates back to 1642. At that time Wilderen was a self-sufficient farmstead where, alongside the farm work, drinks were also distilled: a so-called agricultural distillery. Where the ox stables once stood, there is now a modern brewhouse with stainless steel tanks. The historic façades were preserved during the conversion. Besides beer, Wilderen also makes spirits, and the company welcomes visitors with tours, a brewery café and a shop.
