Norton Finca La Colonia Chardonnay is een witte wijn uit Mendoza in Argentinië, gemaakt van chardonnay. De druiven komen uit de vallei van Luján de Cuyo, waar Norton op vijf plekken wijngaarden heeft. De chardonnay voor deze wijn groeit daar op zo'n 1.100 meter boven zeeniveau. Het etiket vermeldt 13% vol.

Bodega Norton has traditionally been tied to Perdriel, in Luján de Cuyo. The company's first vineyard lay there, the first ever planted south of the Mendoza river. In 1997 Norton bought Finca La Colonia, an estate of well over 1,000 hectares, which made it the largest landowner in Luján de Cuyo. The range to which this chardonnay belongs is named after that finca.

The vineyards used for this Finca La Colonia Chardonnay are located in the Luján de Cuyo valley and belong to 1 of the 5 places within this valley where Norton has its vineyards. The Chardonnay grape in this vineyard grows at an altitude of 1100 metres above sea level, which allows it to keep its wonderfully fresh character. The altitude also ensures that the grape produces ample sugars to reach the desired ripeness and to give the wine a nice body.

Why this works together

Ingredients

600 grams of cod fillet
2 leeks
200 millilitres of cooking cream
2 tablespoons of coarse mustard
30 grams butter
800 grams potatoes
salt and pepper

Method

Peel the potatoes and boil them in salted water for about 20 minutes until tender.
Cut the leek into rings, wash them well and gently braise them for 5 minutes in half of the butter.
Fry the salted and peppered cod in the rest of the butter for 3 to 4 minutes per side, until it just flakes apart.
Gently heat the cooking cream with the mustard and season with salt and pepper.
Serve the cod on the leek, with the mustard sauce and the potatoes.

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

200 grams of olives
100 grams of marinated anchovies

Method

Take the olives and anchovies out of the fridge half an hour before serving.
Drain the olives and lay the anchovies side by side on a plate.
Serve in small bowls with cocktail sticks.
