Saison was brewed in winter on the Walloon farms and drunk in summer by the seasonal workers. It had to keep without refrigeration, so dry and firmly hopped.
The modern saison is pale to amber, highly carbonated, dry, with pepper and citrus from the yeast and sometimes a light sourness.
Thanks to that dryness and carbonation, it is one of the best beers with food: it washes away fat without overpowering the flavor.
