With IPA, the difference lies in the hop variety and the freshness. That is why we buy in smaller quantities more often, and stock brewers from the region alongside the well-known names.

The beer owes its name to the British pale ales that were given extra hops. Hops have a preserving effect, which came in handy on long sea voyages. Whether the story about the voyage to India is entirely true is disputed by beer historians; either way, the name has stuck.
Modern IPA relies on American and New Zealand hops, with grapefruit, mango and pine resin. A New England IPA is hazy and softer in bitterness; a West Coast IPA is clear and dry-bitter.
Drink it young. Hop aroma is the first thing to go: an IPA that is half a year old is a different beer from the same bottle when fresh.

How long does an IPA stay good?
It keeps for a long time, but not at its best: the hop aroma fades within a few months. So buy an IPA for the coming weeks and store it somewhere cool and dark. Keeping for later is something to do with a quadrupel, not with an IPA.
